About us
The MS Program in Human Nutrition is led by faculty with expertise in the breadth of nutritional sciences. Students will follow an academic curriculum that also includes a research project to learn, generate, disseminate, and apply specialized knowledge in human nutrition and dietetics to foster basic discoveries and improve human health. The internationally recognized research, teaching, and outreach of the program are focused on:
- nutrient-gene interactions
- nutrient bioavailability, metabolism, and bioactivity
- diet and risk of disease
- management of obesity and cardiometabolic disorders
- nutrition and cancer
- sports nutrition
- nutrition for children and vulnerable populations
- community nutrition
- healthy behaviors
- food safety education
- food security
